Door Food Kitchen crew from
Huffman Memorial UMC. |
The
Huffman Memorial UMC'S ministry at the Open Door Food Kitchen in
St.
Joseph, MO began in 1987. From that date on the Food Kitchen crew
(all volunteers) have been serving the St. Joseph community on the
fourth
Friday of each month. Their menu consists of goulash, buttered bread,
green beans, pickles, applesauce jello, cookies and milk, juice or
coffee. The financial assistance for the Open Door Food Kitchen mission comes from donations made by the members of the Huffman UMC congregation. The UMW also conducts a dinner in the spring to help with expenses. |

Food Kitchen Goulash
40 lbs. hamburger 12 lbs. elbow macaroni 1 gal. Ragu spaghetti sauce 8 pkgs. Always Save spaghetti sauce mix 12 - 46 oz. cans tomato juice 4 lbs. onions (chopped and cooked ahead of time) 1 lb. Oleo (4 sticks) Cook hamburger and onions - put 10 lbs. in each 6" deep steam table pan (19" x 12") (need 4) Cook elbow macaroni - 3 lbs. at a time with a stick of Oleo Mix Ragu sauce, 2 cans of tomato juice and spaghetti sauce mix - stir well and divide over all 4 pans of hamburger and macaroni Pour remaining 10 cans of tomato juice over pans (2 1/2 cans in each pan). Mix thoroughly and heat in oven. Serves approximately 200. |

Jello Applesauce
24 pkgs. strawberry Jello (8 per container) 8 cups boiling water (8 per container) 3 bottles applesauce (64 oz. each) Mix all ingredients equally in three 1 1/2 gallon containers and fill to top with ice water. Place in refrigerator overnight until set. Serves approximately 200. |

Green Beans With Bacon
8 gal. green beans 4 lbs. chopped onions (precooked) 5 lbs. bacon (cooked and crumbled) Cook bacon and onions ahead of time. Before serving, mix them in with the green beans and heat. Serves approximately 200. |
